PEACH BBQ GLAZED CHICKEN SLIDERS

INGREDIENTS:

  • 1 can EU canned peaches (in juice, not syrup), drained & pureed
  • 1½ lbs chicken breast (poached & shredded)
  • ½ cup low-sugar ketchup
  • 2 tbsp apple cider vinegar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • Whole wheat slider buns
  • Pickled red onions & coleslaw (optional toppings)

INSTRUCTIONS:

  1. In a saucepan, mix peach purée, ketchup, vinegar, paprika, garlic, and mustard powder. Simmer until thick (about 10 minutes).
  2. Mix shredded chicken with the peach BBQ sauce.
  3. Toast slider buns, assemble with chicken, and top with optional slaw or onions.

Use gluten-free buns or lettuce cups for gluten-sensitive guests.
